Fresh Island Poke

Fresh Island Poke on a Maui Onion Tulip

INGREDIENTS:
16 oz.   Fresh Ahi, finely diced
6 oz.   Maui Onions, Julienned
1 Tsp  Inamona (roasted kukui nut), ground
3 oz.   Green Onions, Sliced
1 Tbsp   Chili Garlic Sauce
½ Cup   Soy Sauce
1 Tblp   Sesame Oil

METHOD OF PREPARATION:
Mix all above.  Chill and let rest for 1 hour. Place small amounts on Maui Onion tulips and serve chilled.

To make the Tulips, quarter a whole Maui Onion and peel off leaves, making delicate “boats” or “Tulips” which will hold small amounts of the Ahi Poke.
