INGREDIENTS:
4 oz. Smoked Beef (Pipikaula), may substitut with fresh Ahi
1 oz.Limu Ogo
½ oz.Limu Kohu
¼ cup Tomato skin, julienne
¼ cup Japanese or European cucumber, julienne
¼ cup Maui onion, julienne
½ tsp. Ina mona (roasted kukui nut)
½ tsp. Soy sauce
¼ tsp. Hawaiian salt or rock salt
¼ tsp. Black pepper
1 each Hawaiian chili pepper, minced fine
METHOD OF PREPARATION:
Slice pipikaula into thin strips. Fold in tomato, onion, and cucumber. Add seaweed, then toss in bowl with remaining items. Let rest for one hour and serve chilled.
