Kalua Pork Spring Rolls

INGREDIENTS:

¼  oz.  Carrots

¼ oz. Green Beans

¼ oz. Celery

¼ oz. Bean Sprouts

1 sprig Mint Leaves

1 oz.of Cooked Kalua Pork (with Salt and Pepper to taste)

1 pc. Lumpia Wrapper

Egg wash to seal lumpia wrapper (one egg with 1 Tbls water, whipped with a fork)

METHOD OF PREPARATION:

Julienne carrots, green beans, celery and mint leaves+9.  Shred kalua pig and season with salt and pepper to taste.  Line all ingredients in center of lumpia wrapper.  Tuck ends in and roll wrapper around ingredients.  Use simple egg wash to seal the open edge.  Dust with cornstarch and deep fry.  Cut each roll in half slantwise to serve.  Serve with Maui Tropical Fruit Salsa on side.  Serves one.
